Vegan Peppermint Hot Chocolate Cookies

Ingredients
  

dry ingredients

  • 1 cup all purpose flour (or gluten-free flour)
  • 1/4 cup cacao powder
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt

Instructions
 

  • Preheat oven to 350° F
  • In a medium size bowl, mix all of the dry ingredients together until fully blended. Set aside.
  • In a large mixing bowl, mix together butter and coconut sugar. You can use a hand mixer or whisk hand until whipped. Once it is whipped, add maple syrup, vanilla, and peppermint.
  • Melt 1/2 cup chocolate chips in microwave or stove top. (If done in microwave only 20 second intervals and stir)
  • Add the melted chocolate into the wet ingredients. Whip again until everything is smooth and incorporated.
  • Add the dry ingredients into the wet, and mix until a cookie dough forms.
  • Fold in another 1/2 cup of chocolate chips. Then form into cookie shapes with your hands, and place on a parchment. Press mini marshmallows into each cookie.
  • Bake for 13 minutes. Once done, let it out to cool for at least 15-30 minutes before serving. Enjoy!
