Vegan Peppermint Hot Chocolate Cookies
These vegan peppermint hot chocolate cookies are a staple for winter desserts. They’re the perfect plant-based sweet. They’re so warm and comforting. They’re easy to share and even easier to eat. These cookies are so delicious especially dunked in plant-based milk.
I made this recipe with all purpose unbleached organic flour, but you can also make these gluten-free with all purpose gluten-free baking flour.

Ingredients for Vegan Peppermint Hot Chocolate Cookies
:: dry ingredients ::
1 cup all purpose flour (or gluten-free flour)
1/4 cup cacao powder
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon sea salt
:: wet ingredients ::
1/2 cup cold vegan butter
1/2 cup coconut sugar
2 tablespoons maple syrup
1 teaspoon vanilla
1/2 teaspoon peppermint extract
1 cup lily’s stevia chocolate chips
Method for Vegan Peppermint Hot Chocolate Cookies
Preheat oven to 350° F.
In a medium size bowl, mix all of the dry ingredients together until fully blended. Set aside.
In a large mixing bowl, mix together butter and coconut sugar. You can use a hand mixer or whisk hand until whipped. Once it is whipped, add maple syrup, vanilla, and peppermint.
Melt 1/2 cup chocolate chips in microwave or stove top. (If done in microwave only 20 second intervals and stir)
Add the melted chocolate into the wet ingredients. Whip again until everything is smooth and incorporated.
Add the dry ingredients into the wet, and mix until a cookie dough forms.
Fold in another 1/2 cup of chocolate chips. Then form into cookie shapes with your hands, and place on a parchment. Press mini marshmallows into each cookie.
Bake for 13 minutes. Once done, let it out to cool for at least 15-30 minutes before serving. Enjoy!
