This butterfly pea lemon elixir is the perfect mocktail or cocktail mixer. It makes for a beautiful purple color that changes when you add in the lemon. Makes for a good culinary show for your guests to do yourself.

Ingredients for this Butterfly Pea Lemon Elixir

This recipe will make for 6 servings worth. 1 cup = 1 serving. Adjust based on serving sizes and types of glassware you’ll be using.

Method for making this recipe

  1. Fill 3 cups of filtered water into a large vessel, pot or bowl. Then add in 2 teaspoons of butterfly pea protein powder.
  2. Use an immersion blender, milk frother or whisk to mix powder into water until well combined.
  3. Then add in 1/2 Tablespoon of liquid stevia into the butterfly pea mixture.
  4. Pour in 3 cups of sparkling water into the butterfly pea mixture
  5. In a separate vessel, pour 1 cup of organic lemon juice. (About 5-6 lemons if you’re going fresh squeezed.)
  6. Fill your glasses with ice cubes and pour in butterfly pea mixture. Then add a splash of organic lemon juice to each glass and watch the colors change.

I like to have my guests pour their own lemon juice into the elixir so that they can really enjoy the affects of the colors changing.

You can add more liquid stevia depending on your preference in sweetness.
