Vegan Chicken Marinara

  • Finely mince garlic. Heat up cooking oil in a pan on medium-low heat. When the pan is hot, add the mince garlic and slow cook on low for 10-15 minutes.
  • In a small sauce pan, heat up you marinara sauce on medium-low heat.
  • Once the garlic has slow cooked, add mixed greens or baby spinach and toss it into garlic oil. Mix it around until slightly wilted (careful to not overcook.) Add salt to taste.
  • In a nonstick pan cook chick’n scallopini going off the directions. Add all purpose seasoning on each side of chick'n.
  • Plate it with sauteed garlic greens, then chick’n scallopini. Pour marinara sauce over and garnished with fresh parsley. Enjoy!
