This vegan chicken marinara makes for a quick and easy plant-based recipe. I don’t typically reach for much the processed meats, but this chick’n scallopini from gardein is so good!

This recipe is good for 2 servings, but feel free to make more if you have more mouths to feed. Just double or triple the recipe 🙂

I will list out all ingredients and method to make this easy vegan dinner, but also feel free to jump down to the recipe card for an easier read.

Finely mince garlic. Heat up cooking oil in a pan on medium-low heat. When the pan is hot, add the mince garlic and slow cook on low for 10-15 minutes.

In a small sauce pan, heat up you marinara sauce on medium-low heat.

Once the garlic has slow cooked, add mixed greens or baby spinach and toss it into garlic oil. Mix it around until slightly wilted (careful to not overcook.) Add salt to taste.

In a nonstick pan cook chick’n scallopini going off the directions. Add all purpose seasoning on each side of chick’n.

Plate it with sauteed garlic greens, then chick’n scallopini. Pour marinara sauce over and garnished with fresh parsley. Enjoy!

This vegan chicken marinara dinner takes no more than twenty minutes to make. I enjoy this one during the Christmas holidays as it’s the perfect vibrant colors of red and green. It’s a warm and comforting meal that always wins the approval of non-vegans too!

I recommend using this all purpose seasoning when you are cooking the chick’n as well as in the marinara sauce.
