Valentine’s day is coming up and these keto chocolate covered strawberries are the perfect treat to share with your loved one. When I say loved one, I’m not just talking about about your partner (or hook up buddy or whatever you want to label it.) I’m talking about you! Yes, self love comes first. So don’t just think this recipe is for couples. This goes for your galentines day, self love day or hey, not excluding the ones that are mutually exclusive as well.

The beautiful thing about these vegan chocolate covered strawberries is that they are so ridiculously easy to make. I’m all for things that save you time and hassle. If it’s stress-free, it’s for me!

Ingredients for this recipe

You’ll wanna get the refined coconut oil in order to avoid the coconut flavor, but hey if you just have virgin coconut oil and you want the notes of coconut, by all means go for it! I usually love me the taste of added coconut, but for this recipe, i’m aiming for just a classic chocolate covered strawberry taste. I mean, chocolate covered strawberries are fancy enough as is. It needs nothing extra in my opinion.

Method for this recipe

First off you’re gonna make a double boiler. How you do this is heat up a pot or sauce pan of water and bring it to an almost boil.

Place a heat safe bowl to float into the hot water. In the bowl, throw in the coconut oil and chocolate chips. Stir consistently until the chocolate is fully melted. Control heat temperature to ensure that water does not begin to fully boil.

Once chocolate is fully melted. Keep bowl in hot water, turn off heat. Dip raw strawberries into chocolate and fully coat. Allow excess chocolate to drip and place on a plate. Repeat this with all strawberries.

Place plate of chocolate covered strawberries in fridge for at least 20 minutes to harden. Keep in fridge until ready to serve. Enjoy!
