There are so many plant-based milks to choose from. Coconut milk is one that is easy to make. Here is a recipe for a vegan coconut milk that only uses a few ingredients. All you need are coconut flakes, hot water, vanilla (optional), a nut milk bag and blender.

This coconut milk recipe is very simple. All you have to do is soak coconut flakes in hot water. Then cover with a kitchen towel for 2 hours.

Once the coconut flakes are completely soaked, transfer the water and coconut into a blender. Add in vanilla extract then blend for 2 minutes or until completely blended.

Use a nut milk bag and wring out all of the coconut milk into a bowl. Make sure you’re giving it a good squeeze! Transfer the the coconut milk into a container. I like to put it in a glass jar.

It will stay good for up to a week 🙂 I love pouring this vegan plant-based onto my granola. I use it in my hot cup of cacao. It’s great for making chia seed pudding. This coconut milk recipe is so versatile and can be used in so many different ways.

The great thing about coconut milk as opposed to other milks, is that it doesn’t take as much water as plant-based milk such as nut milks.

Homemade Coconut Milk

Servings 4 cups

Ingredients
  

  • 2 cups coconut flakes
  • 4 cups hot water
  • 1/4 tsp vanilla extract

Instructions
 

  • Soak coconut flakes in the 4 cups of hot water. Cover with a kitchen towel and set aside for 2 hours.
  • After coconut flakes have soaked, place coconut flakes and soaked water into a blender. Add vanilla extract. Blend for 2 minutes.
  • Wring coconut milk out through a nut milk bag and into a bowl. Transfer coconut milk to a container and store in the fridge for up to 1 week.
