Then add the olive oil until the mix is a crumbly texture. Add cold water in small increments until the dough is easy to mold in a ball. Remove the dough from the bowl onto a clean surface onto a piece of parchment paper. Place another sheet of parchment paper on top and use a rolling pin to spread the dough into a rectangle about 1/8" thick.
Once the dough is evenly spread out into a rectangle, remove the top parchment paper layer and use a pizza cutter to cut into squares.
Transfer the bottom parchment paper with the cracker dough squares onto a baking sheet. Place the baking sheet into the oven for 23 minutes or until slightly golden brown.
Remove from oven, allow it cool and harden. Keep in airtight container. Enjoy!
