What makes these vegan chocolate peanut butter balls so great?

Besides the fact that these are a fan favorite when it comes to taste and texture, these can also be loved by many as they are gluten-free. These are deliciously sweet, yet contain zero refined sugar. Although these are desserts that are typically eaten after a main meal, I like to think of these as an easy plant-based pre-work out.

How long can you keep peanut butter balls?

You can keep them in the fridge in an airtight container for up to 2 1/2 weeks. I recommend placing them on top of parchment paper in an airtight glass container. The reason for that being the chocolate may melt and parchment paper just makes everything cleaner. You can also store these vegan chocolate peanut butter balls in the freezer.

I like to keep them in the freezer on parchment paper in a glass container, then place them in the fridge for at least 30 minutes to an hour before serving.

It takes a few very simple ingredients to make this easy recipe. These vegan chocolate peanut butter balls call for the plant-based ingredients of peanut butter (ensure that it’s just peanuts in the ingredient. try to avoid all the funny additives.) You’ll also need maple syrup, almond flour, vanilla extract, lily’s sweet sugar free chocolate chips, and refined coconut oil.

Method

1. In a large bowl mix peanut butter, maple syrup, vanilla extract & pinch of salt
2. Stir in almond flour to the mix
3. Line a plate with parchment paper
4. Scoop 1/2 Tbsp and form into balls
5. Freeze for 20 minutes
6. Melt chocolate chips & coconut oil in a bowl. Microwave for two 30 second intervals. Stir chocolate & coconut oil in between
7. Remove peanut butter balls from freezer and dip into melted chocolate
8. Return to freezer for 5-10 minutes before serving. Enjoy!
