This vegan cheese sauce is the best topping for a variety of snacks and dishes. I made pair this easy sauce with nachos, potatoes or just using it as a dip with some cut veggies like cucumbers.

This cheese sauce recipes calls uses butternut squash. I got the butternut squash from my Good Apple Food box which delivers organic produce in the Austin, Texas area.

I cut the butternut squash in half, spooned out the seeds and peeled the skin into compost. I steamed it all together. 1 cup of the butternut squash was used for this vegan cheesy sauce. The other half was used to make a butternut squash soup.

Ingredients for Vegan Cheese Sauce

  • butternut squash
  • full fat coconut milk
  • minced garlic
  • chopped onion
  • olive oil
  • nutritional yeast
  • salt
  • turmeric powder
  • black pepper
  • ground red pepper (optional)
  • ground flaxseed (for thickening)

The key ingredient of this recipe is the nutritional yeast. Nutritional yeast is a staple in any plant-based kitchen. It gives recipes a delicious cheesy taste. It also acts as a thickener. Best part, it’s high in protein, B12 and other essential vitamins. It’s great for sprinkling onto top of snacks or creating sauces such as this vegan cheesy sauce.

Vegan Cheesy Sauce

Ingredients
  

  • 1 cup butternut squash
  • 3/4 cup full fat coconut milk
  • 1 Tbsp minced garlic
  • 1/4 cup chopped onion
  • 1 Tbsp olive oil
  • 3 Tbsp nutritional yeast
  • 1/2 Tbsp salt
  • 1 tsp turmeric powder
  • 1/4 tsp black pepper
  • 1/8 tsp ground red pepper (optional)
  • 2 Tbsp ground flaxseed (for thickening)

Instructions
 

  • Steam the butternut squash for 10-15 minutes until soft
  • While the butternut squash is steaming, cook the garlic, onion and oil in a sauce pan on medium-low heat until fragrant and translucent. (Careful to not burn the garlic otherwise it will become bitter)
  • Add in butternut squash, full fat coconut milk, turmeric powder, black pepper, salt, nutritional yeast and ground red pepper (if you want a little kick to it.) Stir and cook for 5 minutes.
  • Transfer all ingredients from the sauce pan into a blender and blend for 1 minute.
  • Place ingredients back into the sauce pan and add in ground flaxseed. Cook on medium heat for 5 minutes until thickened.
  • Add salt and pepper to taste if needed. Enjoy!
