Ingredients for Fluffy Vegan Chocolate Chip Protein Pancakes
1 cup of all-purpose flour (you can also use gluten-free flour)
1/4 cup of vegan vanilla protein powder
1 tsp baking powder
1/4 tsp sea salt
2 Tbsp maple syrup
1 tsp vanilla extract
1 cup of water
1/2 cup stevia chocolate chips
Method to Make Fluffy Vegan Chocolate Chip Protein Pancakes
In a large bowl, whisk flour, protein powder, baking powder and salt together.
Then add maple syrup, vanilla extract and water. Mix until it is well combined and a thick pourable consistency.
While the batter is resting, heat up a non-stick pan on medium heat. Use a cooking spray to lightly oil the pan. When the pan is hot, scoop 1/4 cup of batter at a time into the pan.
Flip the pancake after 2-3 minutes or until the edges begin to firm up. Cook for about 2-3 minutes on each side or until dry and golden. You may need to adjust the heat to a lower temperature after cooking a few pancakes.
