Finely chop your garlic and onion. Heat up a small pan on medium-high heat. Place 1 Tbsp of olive oil. Add in garlic and onion cook until fragrant. Turn down heat to make sure to not over burn.
Make sure your mushrooms are washed and dry. Add shiitake mushrooms to the garlic and onion pan. Cook and stir until mushrooms have softened. Take off the heat and set aside.
Finely chop kales and remove all stems. Add to a mixing bowl with olive oil, seasoning and salt and pepper to taste. Use hands to massage kale until it is a soft texture.
Transfer massaged kale to a serving plate and top it with the sauteed mushrooms. Enjoy!
