Pumpkin Seed Dip

This pumpkin seed dip is 100% whole food plant-based. It is easy to make and only uses a few simple ingredients.

Servings 1 cup

Ingredients
  

  • 1 cup raw pumpkin seeds
  • 1/4 cup olive oil
  • 2 garlic cloves
  • 1/4 tsp salt (or to taste)
  • 1 whole  fresh squeezed lemon

Instructions
 

  • Soak raw pumpkin seeds in hot water for at least 1 hour. Drain and rinse thoroughly.
  • In a high speed blender or food processor, add raw pumpkin seeds, olive oil, salt and fresh squeezed lemon juice. Keep blending until it is a thick and smooth consistency.
  • Optional to top with raw pumpkin seeds. This is good to store in the fridge for one week.
