Soak raw pumpkin seeds in hot water for at least 1 hour. Drain and rinse thoroughly.
In a high speed blender or food processor, add raw pumpkin seeds, olive oil, salt and fresh squeezed lemon juice. Keep blending until it is a thick and smooth consistency.
Optional to top with raw pumpkin seeds. This is good to store in the fridge for one week.
